Blueberry Muffin Protein Bars

One of my favorite grab-n-go breakfasts is a protein bar. Howeverrrrr, store bought protein bars can be pricey and filled with mystery ingredients. So, I came up with a bomb protein bar recipe that saves money, has only the best ingredients, fills me up, AND tastes fantastic! It consists of:

  • Oats

  • Vanilla protein powder (you can change this to any flavor protein powder you like for a variety of protein bars!)

  • Natural peanut butter (Or any natural nut butter)

  • Banana, mashed

  • Cinnamon

  • Blueberries (you could also use chocolate chips, nuts, dried fruit, or any other add-in you like!)

In a large mixing bowl, combine oats, protein powder, cinnamon, and mashed banana. I find it's helpful to start off mixing with a spoon but then get in there with my hands to combine everything.

Then mix in the blueberries and press your dough into a baking dish like so:

Add some additional blueberries on top for fun, and press them gently into the dough.

Stick the pan in the freezer for about 20 minutes. Then remove the pan and cut into bars! Make a bunch on Sunday and grab em and go the rest of the week!

Makes 8 bars
