Churro Cauliflower Gnocchi with Vanilla Cinnamon Dipping Sauce
Love churros? Love cauliflower gnocchi? Well I GOT YOU with this tasty, bite-sized treat!
This recipe uses 1 whole bag of Trader Joe's cauliflower gnocchi, which has 2.5 servings
For the Churro Gnocchi:
1 bag cauliflower gnocchi
2 TBS coconut sugar
2 tsp cinnamon
For the Dipping Sauce:
1/4 cup vanilla protein powder
1 TBS water
A dash of cinnamon
Spray a pan with cooking spray (I like to use a coconut oil spray)
Empty a package of cauliflower gnocchi in the pan and cook on medium-high.
When it looks like the gnocchi is about halfway cooked, sprinkle in 1 TBS coconut sugar, and stir to coat the gnocchi.
Then sprinkle in 1 tsp cinnamon and stir.
Keep stirring around until the gnocchi is cooked and sticky.
In a separate bowl, combine 1 TBS coconut sugar and 1 tsp cinnamon.
Toss each piece of cooked sticky gnocchi in your cinnamon-sugar mixture to coat.
Mix together the protein powder and water.
Sprinkle in a dash of cinnamon and stir it up.
Enjoy those delicious, nutritious bite sized churros and dip them in that sauce!
