HALLOWEEN Dark Chocolate Pumpkin Protein Brownies

"Trick or Treat, smell my feet, gimme something good to eat!" No problem, I got something good for you to eat right here!

I am in full Halloween-festive mode. I'm actually listening to "Monster" by Kanye West right now as I type this with my matte black fingernails. There are so many fun treats to eat this time of year, and I think it's great to indulge a bit on some of your favorites, AND enjoy some healthy versions that will give you some great nutrient benefits. So, I present to you: Dark Chocolate Pumpkin Protein Brownies. Ready?


Here's what I used:

  • Kodiak Cakes Dark Chocolate Flapjack and Waffle Mix

  • Libby's pumpkin puree

  • Orgain chocolate plant protein which you can get for 30% off with my code: DELISHPROTEIN

  • Almond milk (I used Califia Farms cause it's my fav)

  • Pumpkin candies (you the ones that are like candy corn? I loooooove them!)



I preheated my oven to 350 degrees and prepped a small baking dish with coconut oil cooking spray. Then in a large mixing bowl, I dumped in the Kodiak Cakes mix and pumpkin and mixed them together.


Once the dough was ready, I pushed it into a baking dish like this:

Then I popped it into the oven and baked it for 10 minutes. Then I let it cool for just a few minutes.

While the brownies were in the oven, I mixed up the protein powder and almond milk to make the frosting.

After the brownies had cooled for a few minutes, I spread the frosting over the top.


Mmmm brownies...obvi I had to sample the corner pieces.






Recipe

Makes 12 2 inch brownies


Ingredients

For the brownie batter:

  • 2 cups Kodiak Cakes Dark Chocolate Flapjack and Waffle Mix

  • 1 cup pumpkin puree

For the frosting:

  • 3/4 cup Orgain chocolate plant protein which you can get for 30% off with my code: DELISHPROTEIN Or you can use whatever chocolate protein powder you like!

  • 3/4 cup almond milk (I used Califia Farms cause it's my fav)

  • Pumpkin candies (you the ones that are like candy corn? I loooooove them!)

Directions

1. Preheat your oven to 350 degrees and prep a baking pan with cooking spray.

2. Combine Kodiak Cakes mix and pumpkin puree in a large mixing bowl.

3. Put the dough in the baking pan and bake for 10 minutes.

4. While the brownie dough is baking, mix up the chocolate protein powder and almond milk to make your frosting.

5. When the brownies are done baking, let them cool for just a couple minutes and then spread your frosting on top.

6. Cut your brownies up and put the pumpkin candies on top!
