Hearty Harvest Veggie Beef Soup
Today was the first day of fall!! I loooove fall: the smells, the sweaters, the FOOD, I could go on... So to celebrate, I made a super nutritious, super filling, and super easy soup - PERFECT for chilly night dinners. Here's what I used:
Chicken bone broth - I used bone broth rather than regular broth because of all nutrient benefits!
Salt and pepper
Then I ate it with pumpkin seed crackers and Fall felt in full swing!
I started by putting the avocado oil in a huge pot and warming it a little. Then, I added my chopped onion and let it sauté for a few minutes. Next, I added the sweet potato because it's the hardest of the other veggies and would need the most time to cook. I let the oil, onion, and sweet potato simmer together for about 5 -7 minutes while I prepped the other veggies.
Next, I put in the celery, zucchini, green beans, bone broth, and crushed tomatoes and let it all simmer for about 20 minutes. During that time, I cooked the beef in a separate pan.
I added the beef, garlic, seasonings, and kale, stirred it all together, and let it all simmer for another 5-10 minutes.
Serve immediately with your favorite roll, crackers, or whatever you want!
1-2 TBS avocado oil
1/2 white onion, diced
2 cups sweet potato chunks
2 celery stalks, sliced
1 zucchini, sliced
1 cup green beans
4 cups chicken bone broth (or beef/chicken/vegetable broth - whichever you prefer!)
1 28 oz can crushed tomatoes
2 garlic cloves
1 cup kale
1/2 tsp oregano
1 tsp Italian seasoning
1 tsp salt, dash of pepper
16 oz stew meat
1. Heat avocado oil in a large pot.
2. Saute onion for a few minutes.
3. Add sweet potato and cook for 5 minutes.
4. Toss in the celery, zucchini, green beans, bone broth, and crushed tomatoes and let it all simmer for about 20 minutes.
5. While the soup simmers, cook the beef through in a separate pan.
6. Then add the beef, garlic, seasonings, and kale, stir it all together. Let it all simmer for another 5-10 minutes.
Serve warm with your favorite roll, crackers, and other sides/toppings/etc.! Enjoy!
