Kimchi Chigae

I LOVE Korean food! They take so many foods that are amazing for your body and make them taste so good! The star of the Korean food show is KIMCHI. Kimchi is fermented cabbage drenched in a spicy red sauce and other seasonings. This recipe is a soup/stew situation made with kimchi that is big time traditional Korean staple. It's also, in my opinion, the easiest Korean meal to make!


Here's what you'll need for this recipe:


  • Kimchi - you can get this at most any grocery store in the produce or natural foods section. It comes in jars or packets.

  • Zucchini

  • Shiitake mushrooms

  • Bone broth

  • Tofu, extra firm

The first step is putting the kimchi, juice and all, in a large pot and cooking it for about 5-10 minutes, or until the juice gets bubbly and the crunchy parts of the kimchi soften a bit.

Next, add the zucchini and cook that until it gets tender.

Add the mushrooms and bone broth and let it all cook together until the mushrooms are tender and cooked.

Last, add in your tofu cubes. Turn the heat down to low and it everything simmer for a few more minutes.


And that's it! Serve with rice and you have an authentic, traditional Korean meal!

  • 1 cup Shiitake mushrooms, cut into halves

  • 2 cups Bone broth

  • 1 package Tofu, extra firm, cut into cubes
