Mushroom Swiss Burger Zucchini Boats

A tasty twist on a classic! This is the perfect light dinner!!

This recipe makes 4 boats.


  • 2 zucchinis

  • Ground turkey

  • Mushrooms, sliced

  • 4 slices Swiss cheese

  • 1 tsp rosemary

  • 1 TBS garlic powder

  • Salt and pepper to taste


  1. Preheat your oven to 400 degrees.

  2. Cut the zucchinis in half, and scrape out the middle seed part. Set the insides in a bowl to the side. Set your sliced zucchinis on a baking pan.

  3. Brown the turkey in a pan, and season with the rosemary, garlic, salt and pepper. Stir in the zucchini insides.

  4. In a separate pan, spray some cooking spray and cook your mushrooms just a bit, not all the way.

  5. Spoon your turkey mixture into the zucchini boats.

  6. Add the mushrooms on top of the turkey.

  7. Put the boats in the oven for 15-20 minutes, depending on the size of the zucchinis.

  8. Remove from the oven, and place your Swiss cheese slices on top. You can put the whole slice on, or cut the slice into strips and put them on that way, whichever your prefer.

  9. Place your boats back into the oven for 5 minutes to get the cheese all nice and melty.

  10. Remove from the oven and serve warm.
