Peppermint Hot Chocolate Protein Cookies

Nothing says "Holiday Season Cozies" like peppermint, hot chocolate, and cookies. So, I put them all together in this recipe, and threw in some protein, cause #fitfood.


My Stevia Experiment

The first go around, I tried to make it low-cal by using powdered Stevia, and um wow I need to learn more about using Stevia because it was a FLOP. First of all, when you use Stevia, you need to use way less of it than regular sugar. Which makes things rough for consistency reasons. And if you accidentally use too much, it's BITTER and NASTY. I thought I could even out the weird taste when I added the yummy protein powder, and although it did help, it was still pretty weird. SO, until further notice when I've cracked the Stevia code, I'm gonna keep using the real stuff :D.


What You Need

  • 1 cup unsalted butter, softened

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 cups almond flour (or all-purpose flour if you want)

  • 1/4 cup Orgain Peppermint Hot Chocolate Protein Powder (or other chocolate protein powder, or hot chocolate powder of your choice)

  • 1/4 cup crushed candy canes

  • 1/8 tsp salt

What You Do

Preheat the oven to 350° and prep a cookie sheet with parchment paper, aluminum foil, or however you prep for cookies.

Mix together the butter, sugar, and vanilla. Next, mix in the almond flour and peppermint hot chocolate protein powder until well combined and fluffy.

Then pour in your crushed candy canes - I used the pre-crushed ones from Brach's cause the less work for me, the better! :D

Then scoop up the dough and roll into 1 inch balls and set them on your cookie sheet.

Then bake for about 15 minutes. While they're baking, put your crushed candy canes in a small bowl.

When they're done baking, let them cool for about 5 minutes, and then dip them in the crushed candy canes. Sprinkle on a little more powdered sugar on top too if you want. And you have a healthy-ISH, slightly better for you, festive TREAT! Dip them in your egg nog, and flip on a Hallmark movie.
