Pumpkin Spice Tortilla Chips with Maple Vanilla Greek Yogurt Dip

Updated: Oct 23, 2019

During the month of October, I'm like, "let's put pumpkin spice and maple syrup on everyyyyything!" So when I saw the left over tortillas in my fridge, naturally I was like, "I gotta put pumpkin spice on these." And the idea of pumpkin spice tortilla chips with maple vanilla Greek yogurt dip was born. Here's what I used:

For the chips:

  • Sprouted grain tortillas (from Food for Life - I freaking love that brand)

  • Coconut oil spray

  • Pumpkin pie spice

  • Coconut sugar

For the dip:

  • Vanilla Greek yogurt

  • 100% Pure maple syrup

I preheated my oven to 350 degrees, then cut up the tortillas in half, then in half, then in half again to make them into chip shapes.

Next I spread them out on a baking sheet covered with foil and sprayed each chip with coconut oil spray. I used my finger after spraying to make sure the oil was evenly distributed on the chips.

Next, I sprinkled the pumpkin spice and coconut sugar on top. I don't like to shake the pumpkin spice directly from the container, because sometimes too much dumps out, or it doesn't quite sprinkle how I'd like it to. So I shake some into the palm of my hand and use my fingers in my other hand to grab it and sprinkle it on how I like. I do the same with sugar.

Then I stuck them in the oven to bake for 5 minutes. Then I flipped them over, sprayed the other side with oil, sprinkled on a little more pumpkin spice and sugar, and baked for another 5 minutes.

While the chips baked, I stirred together the yogurt and maple syrup for a suuuuper yummy dip.

Once the chips were done, I let them cool just a couple minutes and then dug on in!

Makes 4 servings

For the chips:

  • 4 sprouted grain tortillas (from Food for Life - I freaking love that brand) - or whatever kind of tortillas you like - corn, flour, whatever you love!

  • Coconut oil spray

  • Pumpkin pie spice, to taste

  • Coconut sugar, to taste

For the dip:

  • 1 cup vanilla Greek yogurt

  • 2 TBS 100% pure maple syrup

1. Preheat your oven to 350 degrees and prepare a baking sheet with aluminum foil.

2. Cut up the tortillas in half and half and half until you get the chip size you want.

3. Spread the chips out on your baking sheet and spray them with the coconut oil. Use your finger to spread the spray out more evenly on the chips.

4. Use your fingers to sprinkle as much pumpkin pie spice and coconut sugar as you like over the chips.

5. Stick the chips in the oven and bake for 5 minutes.

6. Remove the chips from the oven, flip them over, spray them with a little more oil, and sprinkle with more pumpkin spice and sugar. Bake for another 5 minutes.

7. While the chips are baking, mix up the yogurt and syrup in a bowl.

8. Let the chips cool for a couple of minutes. Then go ahead and chip and dip away!

This is the PERFECT festive fall snack! Enjoy with a fun Halloween movie, enjoy after raking leaves, enjoy while watching the big game, enjoy whenever!
