Ultimate Taco Salad

When I say ultimate taco salad, I really mean ULTIMATE taco salad! This salad is sooo loaded with all the goodies you never knew you needed in a taco salad!

This is what you need:

  • Romaine lettuce

  • Sweet potatoes, cut into chunks

  • Taco seasoning

  • Radishes, thinly sliced

  • Red onion, chopped

  • Red and yellow bell pepper, cut into strips

  • Tomato, diced

  • Cauliflower rice

  • Pumpkin seeds

  • Cheese or nutritional yeast

  • Guacamole

  • Salsa

  • Your favorite meat for taco salads

See, I told you it was ultimate!! This is one VOLUMINOUS meal!

The first step (and my favorite step) is cutting the sweet potato into chunks, and mixing the chunks up in a bowl with some oil (I prefer avocado oil) and taco seasoning. Then, you roast the sweet potato at 400 degrees for about 30- 40 minutes.

The next step is preparing the cauliflower rice. You do this by sauteeing it in a pan with more taco seasoning until it's tender.

Then it's time to assemble your salad!

Start with the lettuce on the bottom, and pile on all of your other toppings!
