Watermelon Goat Cheese Salad

Summer is wrapping up around here, which means watermelon season is almost over. Watermelon is one of my top 5 favorite foods so I knew I had to take advantage of the huge $5 Costco watermelons while I still could! I love cutting watermelon into huge chunks and eating it straight from a Tupperware container. But I thought it would be fun to also toss some watermelon chunks into a salad! So I concocted this recipe, and if I do say so myself, it is so scrumptious and refreshing, I wish I would've been eating it all summer long! Here's what I used:

  • Watermelon

  • Goat cheese

  • Arugula

  • Chopped pecans

  • Lime

  • Olive Oil

It was so so easy. First, I cut my watermelon up into chunks and put them in a bowl to store in the fridge later. Then, I threw some arugula into a salad bowl. I used the pre-washed Organic Girl arugula, because yay for quick and convenient.




Next, I tossed in my watermelon chunks.



Then I sprinkled in some chopped pecans (I used plain pecans, but candied ones would also be delicious in this salad!).



Next, was the crumbled goat cheese.



Lastly, I squeezed out some lime juice and drizzled some extra virgin olive oil, and tossed it all together.






The sweetness of the watermelon, the savory goat cheese, the crunch of the pecans, and the texture of the arugula all combined to play a sweet summer symphony in my mouth.



This salad is the perfect side dish at your next barbecue, or you could eat it as a light summer main dish. It's sure to please!



Recipe Recap:


1 cup watermelon chunks

1 cup arugula

1/4 cup goat cheese

1/8 cup chopped pecans

1/2 fresh lime

1 TBS extra virgin olive oil


1. Throw the arugula in a large salad bowl

2. Add watermelon chunks

3. Sprinkle in goat cheese and pecans

4. Squeeze lime juice over the top

5. Drizzle the olive oil over the top

6. Toss, and enjoy!
